I love tacos and make them for my family quite often. The standard ground beef recipes won’t work in our family because we have vegetarians among us. I try to find recipes that satisfy both the nutritional needs of our vegetarian eaters and are flavorful, too. When I found a Chickpea Tacos recipe that included so many great ingredients, I was hooked. Combining all the classic taco flavors like cilantro, lime, and salsa, with avocado and chickpeas really put these tacos in our "make often please" list. One of my all time favorite dishes in the South is corn bread sopped up in some pot licker. If you make a pot of My Best Pinto Beans, be sure to add the bacon to make the best pot licker this side of Dixie. Every lady raised in the South knows how to mix up a good batch of pinto beans with bacon, and serve it with a big ol’ wedge of cornbread and a pile of mixed greens for good measure. I’ve been to many family gatherings in the South, and I’m constantly amazed at how many varieties of pinto bean dishes I find. I finally asked my neighbor lady if I could watch how she makes her pinto beans and she agreed, as long as I never made them for one of her potlucks.
